CHICKEN ADOBO (filipino inspired chicken)

CHICKEN ADOBO

Ingredients:

  • 8 chicken legs (drumsticks)
  • 1/2 large onion, sliced
  • 5-6 heads garlic, chopped
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp red pepper flakes
  • 2 tsp fish sauce
  • 2 tsp sugar
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1 TBS dark soy sauce
  • 1 cup ( 237ml) water
  • 3-4 bay leaves
  • 1 14.5oz can coconut milk

Directions:

STEP 1


Add oil to a hot pan. Brown chicken in pan on both sides.

Remove from pan and set aside.

Slice onion and roughly chop garlic.

STEP 2

In the same pan that chicken was cooked in, sauté onions and garlic with salt, and black pepper. Sauté for 3-5 minutes.

STEP3

Add red pepper flakes, fish sauce, sugar, soy sauce, rice vinegar, water, bay leaves and dark soy sauce.

STEP 4

Add chicken back to pan, cover with lid and cook for about 30 minutes.

STEP 5

After 30 minutes add coconut milk, cook for another 10-20 minutes without lid.
