This is my version of Kimchi Jjim (Korean braised pork with kimchi)
Ingredients;
- 1 onion
- 1.5lbs (680g) Pork loin
- 16 long pieces of kimchi (or more depending on size)
- 1/4 cup (60ml) kimchi juice
- 2 tbs Gochujang ( Korean red chili paste)
- 2 tbs Korean rice syrup (ssal-jocheong) or (1 tbs sugar)
- 1/2 cup (118ml) water
Instructions:
Cut onions into slices and sauté for 2-3 minutes.
Add kimchi juice and continue sautéing for 1-2 min.
Wrap pork in 2-3 pieces of kimchi.
Place pork wrapped in kimchi on top of onions.
Add rice syrup, gochujang paste and water. Cook for about 40 minutes with lid on, stir occasionally.
Serve with rice and roasted seaweed snack, and use scissors to cut kimchi and pork.
