Smothered pork in gravy
- 4 slices of bacon
- 1/4 cup flour
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp mustard powder
- 1/4 tsp ground black pepper
- 4 pieces of pork lion or (pork chops)
- 1-2 ribs of celery
- 1lb (450g)Mushroom
- 1 large yellow Onion
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cup milk or ( heavy cream)
- 1 tsp Dijon mustard
Cut bacon into bite-sizes, place in cold, oven safe pan, fry over medium heat until crispy. remove from pan.
Mix flour, salt, black pepper, mustard powder, garlic powder, paprika, and cayenne pepper together. Dredge pork in flour mixture. fry pork in bacon fat on all sides until golden brown. Remove pork from Pan and set aside.
Slice onion and mushrooms, dice celery panfry in the same pan used or bacon and pork. Add 1/4 tsp salt and 1/4 tsp pepper.
After the veggies are soft and have color, add 1 tbs unsalted butter and 1-2 tbs of the flour mixture. Stir in well.
Slowly stir in cream or milk sauce, add Dijon mustard.
Return bacon and pork back into the pan cook uncovered in oven at 350 degrees Fahrenheit (176 Celsius) for 30 min.
Serve over rice or mashed potatoes
