salmon fried rice
Ingredients;
- 1 lb (454g) Salmon (1/4 tsp salt 1/4tsp pepper)
- 2 cups Cooked Rice (cooled)
- 1/2 large Onion or (1 medium)
- 2 Bell Peppers (different colors)
- 1-2 Ribs of Celery Pinch of salt
- 1/4 tsp black pepper
- 1/4 red pepper flakes
- 1 TBS Soy sauce
- 1 TBS Mirin (Japanese cooking wine)
- 1 tsp Sugar 1 tsp Fish sauce
- 2 tsp Sesame oil
I also added a pinch of white pepper, which is optional.
Instructions:
Cook rice and let cool.
Cut celery, bell peppers and onion into dices, all veggies should be around the same size.
Set aside until salmon is ready.
Evenly rub salt and pepper over salmon, fry skin side down in olive oil.
After the skin is browned and crispy flip salmon over. Fry until salmon is just cooked through.
After slightly cooled chop salmon into bite size pieces. Set aside for later.
Stir fry vegetables in the same pan that salmon was cooked in, add a pinch of salt, red pepper flakes and black pepper. Stir fry for about 5 minutes.
Add cooked rice and half of the cooked salmon, stir together well.
Add soy sauce, Mirin and fish sauce. After all is mixed together well, add sesame oil.
Add remaining salmon and enjoy!
