White Chocolate and macadamia nut cookies
Ingredients;
- 1 cup (2 sticks) Room temperature butter
- 1/2 cup (100g) Granulated sugar
- 1/2 cup (110g) packed light Brown sugar
- 1 tsp Vanilla extract
- 2 eggs
- 2 1/2 cup (340g) Flour
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 cup (140g) White chocolate chips or chopped white chocolate
- 1 cup (110g) chopped Macadamia nuts
The cookies can be baked right away, but if you have the patience chill the cookie batter in the refrigerator for a hour before baking.
This recipe makes about 30 cookies
Instructions:
In a large bowl, mix granulated sugar and room temperature butter until smooth.
After white sugar and butter are mixed together and creamy, add in brown sugar and mix until creamy.
Whisk in the vanilla and eggs until everything is creamy.
Add flour, salt, baking powder and baking soda to the batter. mix everything into the flour before mixing into the rest of the mixture.
Chop macadamia nuts and white chocolate into chunks, then mix them into the cookie dough.
After chocolate and nuts are mixed in, roll the cookie dough into balls and place them on a baking sheet lined with parchment paper.
Bake in a 350°F/175°C oven for 10-15 min or until edges are golden brown.
